Amritsari Aloo Kulcha Recipe
Amritsari Aloo Kulcha is a traditional Punjabi recipe. It is one of the most famous North Indian Kulcha and usually can be found at Road side vendors . Usually Road side vendors served it with chole , fried chilli, pickle and a glass of Raita.

Cooking Time: 20 mins
Ingredients :
- Potato - 2 large(boil, peel and mash)
- Coriander leaves - 1 tbsp (finely chopped)
- Green chilly - 2/3 (finely chopped)
- Maida - 3 cup
- Amchoor powder - 1/2 tbsp
- Curd - 2 tbsp
- salt to taste
- White sesame seeds (white till) - 1/2 tbsp
- Nigella seeds (kalonji) - 1/2 tbsp
- Red chilli powder - 1/2 tbsp
- Dry Active Yeast (Activated) - 1 tbsp
- In a bowl take maida, salt, curd and active dry yeast and mix well.
- Now knead the dough for 4-5 minutes, and then make semi stiff dough.
- Cover the dough for 30 minutes or till doubled.
- Take another bowl, add mashed potatoes, green chili, coriander leaves, red chili powder, salt, Amchoor powder and mix well.
- Now take the prepared dough, lightly knead it again for 5 minutes.
- Divide the dough into equal sizes .
- roll and make small puri .
- fill the Potato stuffing in between and close it
- roll again and make puri of oval shape , we can stretch kulcha using our hand also.
- now sprinkle till, kalonji & Coriander leaves over it
- put the kulcha on hot tawa from the other side
- cook it on low flame until brown color came out from it
- flip it and cook other side as well
- once both side cooked , add ghee both side and cook for a second
Our Kulcha is ready serve it hot with pickle , chole ,curd etc .
