Imli Ki Chutney (Sweet & Sour Tamarind Chutney) | Chaat waali Chutney Recipe
Sweet & Sour Imly (Tamarind) chutney is a delicious chutney made with tamarind. It can be made with jaggery or sugar. I like to add jaggery and sugar both in my chutney. This imli ki chutney form a great dip for samoas and also for many chaat items ( samoas, kachori, pani puri ,dahi vada , Papdi Chaat etc).
Ingredients:
- Tamarind water (imli ka pani) -100 g

Jaggery - 100 g ( broken into small pieces )

Roasted cumin powder - 1\2 tsp

Red chili powder - 1\4 tsp

Sugar - 2 tbsp

Black salt - 1 tsp

Dry ginger powder - 1\2 tsp
- Garam Masala - 1tsp
- Dats - 3/4
- cardamom Powder - 1 tsp
Method:
- Heat 5-6 cups of water in a pan.

When it comes to a boil, switch off the heat.

Add the tamarind in the water .
- After 1 hour, with the hands, mash the tamarind in water.

Pass it through a soup strainer and try to take out as much pulp as possible.

Put the mixture on heat.

Add jaggery, sugar, black salt, roasted cumin powder, red chilli and dry ginger powder.

Simm the heat and let it cook for 25-30 minutes, till it thicken.

Remove from heat and cool.
- Delicious ‘imli ka chatkhara’ is ready to serve.

Store in a jar and refrigerate for about a month.

Tamarind water: soak the tamarind in warm water for 5 min squeeze the seeds and fiber with your fingers to extract as much juice as possible. Strain and discard fibers and seeds.
